Really Easy Balti Chicken
Serves 1
A really simple recipe that takes very little preparation, tastes amazing and with quantities that can easily be doubled up or increased further to serve more people.
Ingredients:
1 chicken breast
3 – 4 tablespoons of greek yoghurt
2 – 3 teaspoons of Balti curry paste
1/2 cup of Rice

Method:
1. Preheat your oven to 180C.
2. Place your chicken breast on a sheet of foil that is large enough to create a parcel out of.
3. Mix together the greek yoghurt and Balti curry paste, adding more or less Balti curry paste to suit your taste.
4. Pour your yoghurt mix over the chicken breast, covering it completely. Lift the sides of the foil together to create your parcel.
5. Place the foil parcel on a baking tray and cook for 20mins.
6. After 20mins, open up the top of the parcel and cook the chicken for a further 15-20mins.
7. Rinse your rice and cook in boiling water for 10 – 15mins.
8. Drain the rice and serve with your Balti Chicken and sauce.
